Dubonnet Rouge 14.8% is a traditional French wine-based aperitif whose history dates back to 1846. Dubonnet was developed by Joseph Dubonnet in Paris. A defining feature of this classic quinine-based aperitif is the combination of a wine base with cinchona bark (or quinine), selected herbs and spices. The recipe creates a distinctive balance between subtle sweetness, spicy notes and a pleasantly tart, bitter finish. Ageing in oak barrels lends the aperitif additional depth and harmony. Dubonnet is thus part of the time-honoured French aperitif tradition, in which aromatised wines are served both neat and as an ingredient in classic cocktails.
With an alcohol content of 14.8 per cent in the 0.75-litre bottle, Dubonnet Rouge is exceptionally versatile. It can be enjoyed neat, on the rocks or with a twist of citrus, and is also a traditional ingredient in cocktails and long drinks. The ‘gin and Dubonnet’ combination, in which the French wine aperitif is mixed with gin, is particularly well known. Dubonnet can also be served easily with tonic or bitter lemon. Its blend of wine, cinchona bark, herbs and spices makes it an interesting alternative to classic vermouth and other wine-based aperitifs.
Tasting Note
In the glass, Dubonnet Rouge displays a deep ruby red colour with dark to violet highlights. On the nose, ripe red berries and cherries unfold, accompanied by orange peel, rhubarb, aniseed and delicate herbal notes. On the palate, this aperitif is full-bodied and velvety, with notes of raisins, honey and citrus, as well as hints of coffee, dark chocolate and cinnamon, balanced by a subtle bitter note of quinine. The finish is long-lasting, bittersweet and spicy.
Dubonnet Rouge is ideal as an aperitif, served well chilled or over ice with a twist of lemon or orange. The Gin and Dubonnet is a particularly classic combination, whilst it also pairs well with tonic or bitter lemon. Culinary pairings for this French aperitif include pâtés, tapas, mild cheeses and savoury crackers, as well as dark chocolate or desserts featuring red fruits. For a refreshing aperitif experience, it is best served at a temperature of around 8–10 °C.
