Only Virgin Sugar Cane Honey is used for this bottling – a particularly pure sugar cane juice concentrate that gives the rum its smooth sweetness and aromatic depth. The distillates mature in a combination of ex-bourbon, sherry and Pedro Ximénez casks at various stages of ageing to develop a balanced overall profile. The ageing process takes place in the highlands of Guatemala at over 2,300 metres, where the cooler climate promotes a particularly slow, controlled development.
