In order to preserve the aromatic clarity in the best possible way, the grapes are harvested in the early hours of the morning between 5 and 8 am. The grapes are selected plot by plot and pressed particularly gently under neutral gas, using only the first musts. The temperature-controlled fermentation is deliberately stopped by cold temperatures in order to preserve around 12 grams of residual sugar. The result is a harmonious, slightly sweet white wine from France that perfectly combines freshness, elegance and fruitiness.
