Temperature-controlled alcoholic fermentation ensures maximum flavour and freshness. Some of the wine is also vinified in barriques, which creates a fine structure and subtle flavour. In order to preserve the lively freshness and natural acidity, malolactic fermentation is deliberately avoided.
