To produce it, the seeds of ripe pomegranates are gently separated from the skin and lightly pressed to extract only the aromatic juice. This is then concentrated and distilled several times to preserve its intense fruitiness. The Italian sour cherries are also carefully processed, lending the aperitivo its characteristic bitterness. A particular speciality is the secret infusion of cherry leaves and red wine, which matures over several weeks and adds extra depth as well as natural sour cherry flavours.
