The Kyoto Distillery, Japan’s first and only distillery dedicated exclusively to the production of gin, was founded in 2015. Its mission is to capture the essence of Japanese culture and nature in every drop of gin. In Kyoto, a city renowned for its traditional craftsmanship, every bottle of KI NO BI Gin is distilled with the utmost care and precision. The distillery works closely with local producers to ensure that only the finest ingredients are used, reflecting the rich flavours of Japan.

The production process for KI NO BI Gin is just as unique as its flavour. The Kyoto Distillery uses a meticulous process in which the botanicals are divided into six categories: base, citrus, tea, spices, fruit and flowers. Each of these categories is distilled separately to optimally extract the individual aromas. Only after distillation are the various distillates blended together, creating a perfectly balanced composition. This method, inspired by the art of ‘Bunka Seibun’, the Japanese culture of harmony, ensures the characteristic depth and complexity of KI NO BI Gin.

KI NO BI Gin presents an elegant bouquet of citrus fruits on the nose, followed by floral and earthy notes. On the palate, a complex blend of yuzu, fresh spices and a hint of delicate tea unfolds, before finishing with a smooth, slightly sweet aftertaste. This gin is ideal for classic gin cocktails such as the Martini or the Negroni, but can also be enjoyed neat to better appreciate its subtle nuances.
