Production begins during the dry season, when freshly pressed sugarcane juice is fermented and then distilled. This rum is aged for up to 8 years in ex-bourbon casks made of American oak, before being finished for a further 6 months in Bordeaux wine casks. This two-stage cask management process results in a unique combination of bourbon sweetness, gentle toasted aromas and an elegant, fruit-driven depth. The wine cask finish imparts subtle notes of red fruits and a delicate, subtly smoky nuance, which lend the rum its smooth, distinctive character.
