Hayman’s of London Gently Rested Gin pays homage to classic gin production in the traditional British style. Produced by the renowned Hayman’s Distillery, which has been celebrated for its authentic London Dry Gins for over 150 years, this special gin combines the purity of a classic dry gin with gentle ageing in oak casks. With an alcohol content of 41.3% ABV, this gin boasts exceptional depth and a subtle woody note, which lends it a particularly smooth and harmonious character.

Gently Rested Gin is distilled using the traditional London Dry method and then aged for three weeks in old whisky and bourbon casks. This gentle ageing in wood adds an extra layer of complexity to the gin and softens the sharpness of the juniper, without overpowering the classic gin aromas.

Tasting Note

Nose: Mild juniper notes with hints of citrus, delicate spices and a gentle woody nuance.

Palate: Smooth and well-balanced, with classic juniper flavours, a subtle sweetness of vanilla, light spiciness and subtle notes of matured wood.

Hayman’s Gently Rested Gin is ideal for classic gin cocktails with a twist, such as a Martinez or an Old Tom Collins. Its delicate woody note also comes into its own in a gin and tonic made with Indian tonic water – garnished with an orange zest or a cherry. Thanks to its gentle wood ageing, it also pairs beautifully with mature cheeses, dark chocolate or roasted nuts, which highlight its subtle complexity.
