The Kilchoman SAUTERNES CASK MATURED Islay Single Malt Limited Edition 2024 is a rare and technically challenging special release from the independent farm distillery, Kilchoman Distillery. For this edition, the whisky was matured exclusively in ex-Sauternes wine casks throughout the entire maturation period, a process considered particularly challenging even within the realm of experimental cask maturation. Anthony Wills selected a specific combination of fresh and refill Sauternes barriques from two distillation years, with the youngest cask dating from 2018. The final vatting consists of 22 per cent first-fill and 78 per cent refill casks, corresponding to a deliberate ratio of approximately 1:3.


This cask strategy builds on the distillery’s previous experience. The first Sauternes bottling from 2016 was matured entirely in new casks, whilst the second edition from 2018 was only finished for a short period. For the 2024 release, the decision was made to mature the whisky entirely in a balanced cask matrix, with the majority of the refill casks having previously been used for the 2018 finish. Bottled at 50% ABV, non-chill-filtered and without colouring, this limited edition preserves its structure, depth and cask character in their purest form. The whisky is presented in a high-quality gift box.

Tasting Note

Colour: Gold to pale amber, resulting naturally from cask maturation.

Nose: Buttery sweetness, floral notes, subtle smokiness.

Palate: Balanced and structured, with fruity sweetness, candied ginger and a subtle note of peaty smoke.

Finish: Long-lasting, elegant and harmonious, with a balance of sweetness, fruit and smoke.
