Opthimus Rum, produced by the Cuban-based family business Oliver y Oliver, is made from molasses and is aged for an average of 15 years using the Solera method. In this traditional process, which is also used for sherry, the rum passes through various tiers of casks, with the distillate moving from the upper, younger tiers to the lower, older tiers.

The quantity drawn from the lowest tier is always replaced with younger rum to ensure continuous refinement. Following this ageing phase, the rum is further matured in ex-malt whisky casks, which lends it additional complexity.

As well as Opthimus, Oliver y Oliver also produces other renowned brands such as Cubaney, Quorhum, Presidente Martí, Puntacana and Unhiq. The rums used for blending come predominantly from Panama and Trinidad and Tobago, which contributes to the versatility and characteristic profile of their products.

Tasting Note

Nose: Ripe dark fruits, cinnamon, ginger, sandalwood, oak.

Palate: Smooth, honey, toffee, vanilla, coffee, chocolate.
