Description
Description
The Denshin Fuyu Shiboritate Namasake 17.9% vol. 0.72 litre is a particularly fresh and seasonal Japanese sake that is bottled immediately after the first pressing of the new brewing season. Produced by the traditional Ippongi Kubohonten, this premium sake from Japan stands for authentic brewing artistry and the typical freshness of a Shiboritate Namazake. The term Shiboritate means that the sake is bottled directly after pressing, while Namazake indicates that it has not been pasteurised. This means that the original, particularly lively character of this sake made from rice is fully preserved.
Production starts every year at the beginning of October, immediately after the rice harvest, when the new brewing season begins. By the end of October, the first fermentation tank is ready for pressing. The resulting sake forms the first vintage of the season, which is bottled immediately. The basis for this Japanese rice wine is the high-quality Gohyakumangoku rice variety, which is known for its elegant structure and clear flavour. The rice polishing rate of 65% ensures a good balance between fruit, freshness and structure. With 17.9% alcohol by volume, this Shiboritate Namazake is powerful, lively and aromatic.
Tasting Note
A clear sake with a fresh appearance in the glass, refreshing and fruity aromas unfold on the nose, the sake is juicy, fresh and lively on the palate with fruity notes and a lively acidity, the finish is clear, animating and pleasantly long-lasting.
Denshin Fuyu Shiboritate Namazake is an excellent accompaniment to Japanese cuisine, especially sushi, sashimi, tempura or light fish dishes. This fresh Japanese sake also harmonises particularly well with Asian starters, steamed seafood or spicy noodle dishes. It is best served well chilled at around 5 to 10 °C, which allows the fresh aroma and lively structure of this unpasteurised sake to develop optimally.
