The CONSTANTIA HILL Sauvignon Blanc x Semillon 2021 13.5% Vol. 0.75 l is an elegant white wine from South Africa, which comes from the renowned cool-climate wine-growing region of Constantia. This characterful Wine of Origin (WO) Constantia is vinified by Leo Hillinger together with Alexander Waibel and the South African winemaker Justin Van Wyk. The grapes grow in Hillinger's "second home" Constantia, one of South Africa's oldest and most prestigious wine regions, which is known for its fresh and elegant cool-climate wines.


The wine consists of 80% Sauvignon Blanc and 20% Sémillon, a classic Bordeaux cuvée that combines freshness, structure and complexity. The region's temperate climate ensures that the grapes ripen slowly, giving Constantia Hill White its precise flavour and elegant acidity. With 13.5% alcohol by volume, this South African white wine is harmonious, balanced and particularly easy to drink. It has a storage potential of around 2 to 4 years, which means that the wine can be enjoyed young or stored for a short time.

Tasting Note

Medium straw yellow in the glass with delicate green reflections, the nose reveals fruity aromas of elderberry accompanied by delicate notes of paprika and freshly cut grass, the elderberry fruit continues on the palate and is complemented by a fine creaminess and a pleasant drinking flow while a fresh citrus note provides balance, the finish is balanced, fresh and of medium length.

The Hillinger Constantia Hill White 2021 is an excellent accompaniment to fish dishes, seafood, Asian dishes, poultry or white meat dishes. This Sauvignon Blanc Sémillon from Constantia also harmonises well with summer salads, light starters or Mediterranean dishes. Served at around 10 to 12 °C, this South African white wine develops its fresh flavour and elegant structure in a particularly harmonious way.
