The grapes come from selected vineyards, whose fruit is prized for its natural sweetness and distinctive aromas. During production, the second fermentation takes place at a controlled temperature of 13 °C, resulting in a fine and particularly soft perlage. Before the second fermentation, around 10 per cent of Glera must is added, followed by a period of approximately 40 days’ contact with the lees, which imparts additional complexity and finesse. With a residual sugar content of around 21 g/l, this Dry Prosecco is pleasantly harmonious and approachable. Its moderate alcohol content of 11% emphasises its lightness and makes it a versatile choice for a wide range of occasions. In the glass, the Paladin Prosecco Dry Tondo DOC presents a pale straw-yellow colour with a fine and elegant effervescence. On the nose, delicate aromas of wild apple and white flowers unfold. On the palate, the Prosecco is soft, balanced and pleasantly harmonious, with delicate fruit and lively freshness. The balanced acidity provides structure and makes it easy to drink.
