The carefully selected rums, originally from the Caribbean and South America, reach their final refinement stage in Ars, France. There, they are treated using the traditional "double ageing" process, which takes place in discarded oak cognac barrels. This method, which dates back to the 18th and 19th centuries, is known to deeply refine the flavours of the rums.

Plantation Rum Trinidad 2016 begins its ageing process with a five-year stay in bourbon barrels, which give it an impressive ester content of 85 g/hL. This is followed by one year of further refinement in FERRAND barrels before the rum receives its characteristic finish in mezcal casks, which it is given for a further year. In 2023, this exclusive rum is bottled with a dosage of 5 g/L to preserve the purity and integrity of its flavours.
