The production process at Koval is characterised by a combination of traditional techniques and modern innovation. All spirits are distilled in a modern column still, which enables the production of a particularly pure alcohol. Distillation takes place in small batches, allowing for careful control over the entire process and ensuring that only the highest-quality products make it into the bottle. Koval uses only the ‘heart’ of the distillate – that is, the middle and purest part of the distillation process – to produce spirits with a particularly clear and intense flavour.

Koval Distillery was founded in Chicago in 2008 by Robert and Sonat Birnecker and was the first distillery to open in Chicago since Prohibition. The name "Koval" means "blacksmith" in Yiddish and "blacksmith" in German, and symbolises the craftsmanship that goes into every bottle. The founders left their academic careers to devote themselves entirely to the art of distillation, and have made Koval one of the leading organic distilleries in the USA. Their mission is to produce spirits of the highest quality, crafted using both traditional methods and sustainable practices.

Koval Distillery has quickly made a name for itself in the world of spirits and has received numerous international awards for its innovative, high-quality products. Koval’s Dry Gin is another highlight of the range, produced using a selection of 13 botanicals, including juniper, wild-grown flowers and citrus fruits. In addition to whisky and gin, Koval also produces a range of liqueurs, all made according to traditional recipes and using natural ingredients.
