Today, the distillery is run by his descendants, the four siblings Jacopo, Geampaolo, Barbara and Andrea Poli. Poli Barrique Due Barili is made from a blend of Prosecco marc and pure marc, which gives it a unique, fresh base. After distillation, this grappa matures for two years in French barriques, giving it a fine woody and vanilla flavour. This is followed by a further two years of ageing in sherry PX barrels, which gives the grappa additional depth and a remarkable aroma of dried fruit and sweetness. This double barrel ageing in oak and sherry creates a complex, balanced profile that combines both soft and intense flavours.
