Cedar Ridge RYE WHISKEY is a characterful American rye whisky, bottled at 43% in a 0.7-litre bottle, which is distinguished by the unusual composition of its mash bill. This consists of 85% rye, 12% maize and 3% malted barley. A distinctive feature of Cedar Ridge Whiskey is the use of malted rye, whereas many other rye whiskies are made predominantly from unmalted rye. For malting, the grain is first soaked in water and allowed to germinate, before the process is completed using hot air. This creates natural enzymes that aid the subsequent mashing process. At the same time, the malted rye contributes to a more robust structure and additional grain nuances.


Cedar Ridge Whiskey thus combines the high rye content of a classic rye with a distinctive production approach. In particular, the 85 per cent rye mash bill ensures the distinctive grain and spice character, whilst maize and malted barley complement the recipe. The use of malted rye also brings hints of toast and baked goods to the profile. Tasting Note

Colour: Rich amber.

Nose: Baked apples, honey, toasted almonds and caramel, complemented by cloves, allspice and nutmeg.

Palate: Full-bodied with ripe fruit and caramel, accompanied by brown spices, oak, leather and black pepper.

Finish: Long-lasting and well-balanced with spicy rye, oak, dark spices and subtle fruity notes.

Cedar Ridge Whiskey is excellent enjoyed neat, over a large ice cube or in classic rye cocktails such as a Manhattan or an Old Fashioned.
