Description
The Bozal Single Maguey Cuishe Mezcal Artesanal is one of the wild agave mezcals from Oaxaca with the strongest character and is based exclusively on the rare Cuishe agave, a subspecies of the Karwinskii family. This agave is immediately recognisable by its distinctive, vertically growing trunk: It forms a long, slender body with a crown of leaves at the top and takes around twelve years to reach full maturity. This unusual shape means that the stem contains particularly firm, structured piña material, which makes harvesting and processing much more challenging. The result is an aromatically unique single maguey mezcal with a tropical, floral and mineral flavour.
This mezcal is produced using strictly traditional, artisanal methods: the agave hearts are cooked in earthy pit ovens, crushed with a donkey-drawn tahona and then fermented in open containers with naturally occurring yeast. Double distillation preserves the unadulterated character of the Cuishe agave. The iconic Bozal ceramic bottle in deep blue refers to the Single Maguey philosophy and creates a tactile reference to artisanal production. The name Bozal, which means "wild" or "untamed", honours the traditional production methods of the mezcaleros from the hard-to-reach regions of Oaxaca, Guerrero and Durango.
Tasting Note
Colour: Clear.
Nose: Intense citrus notes, burnt orange, honeycomb, floral herbs.
Flavour: Raw honey and jalapeño spiciness, accompanied by mineral accents.
Finish: Smoky, mineral, with a hint of wet stones; long and complex.
This Cuishe Mezcal Artesanal is an excellent accompaniment to grilled pulpo, tuna tataki, grilled chillies, corn tamales or mushroom quesadillas, which emphasise its mineral and citrusy structure. Sweet combinations such as honey flan, roasted orange, coconut rice or mango with chilli harmonise perfectly with its spicy and tropical flavours. In drinks, it is suitable for sophisticated variations such as the Smoky Cuishe Sour, Mezcal Negroni or straight from the Copita, where its edgy, wild character comes into its own.
