Description
The Villa Sandi winery, located in the heart of the Prosecco region of Veneto, Italy, is a renowned winery known for its high-quality sparkling and still wines. Villa Sandi, a magnificent 17th century building, serves as the winery's impressive headquarters and reflects the rich history and tradition of winemaking in this region.
Villa Sandi is particularly famous for its Prosecco production. The grapes grow on the hilly landscapes of Valdobbiadene, where the microclimate and mineral-rich soils provide ideal conditions for cultivation. The grapes are carefully harvested by hand to ensure the best possible quality. Sustainability and environmental protection take centre stage, which is underlined by modern techniques and numerous certifications.
Villa Sandi's base wine cuvée is made from 60% Pinot Nero and 40% Chardonnay, which grow on specially selected marl soils of alluvial origin in Veneto. These soils are rich in subsoil and offer ideal conditions for viticulture.
The whole grapes are gently pressed in a pneumatic press, with the resulting must being transferred to temperature-controlled tanks after an initial racking. It remains there until it is further processed into sparkling wine.
The must is mixed with specially selected yeast cultures from Villa Sandi and transferred to tanks where fermentation takes place at a controlled temperature of 15-16°C. This temperature control brings out the flavours of the harvest. Once the required alcohol and sugar content is reached, fermentation is stopped by cooling. After at least two months on the lees, the sparkling wine is ready for bottling.
Tasting Note
Clear golden yellow in the glass with a perlage that lasts for minutes. Fragrant aroma of freshly baked bread crust with a hint of walnuts and butter. Pleasantly fresh and dry on the palate, with a soft flavour. The delicate foam supports and accompanies a finish of exotic fruits.
