Description
The Bozal Single Maguey Tepeztate Mezcal Artesanal is one of the most distinctive agave spirits from Oaxaca and is based exclusively on the wild Tepeztate agave, a rare subspecies of the Marmorata family. This agave prefers to grow on steep, rocky cliffs and forms impressive, yellow-flowering quiotes at the end of its Langs life cycle. Due to its very irregular foliage and extremely slow growth, Tepeztate is one of the wild agaves with the strongest character of all. Its profile is powerful, flavourful and characterised by natural intensity, which is impressively reflected in this single maguey mezcal.
This mezcal is produced according to strict artisan tradition. The agave hearts are cooked in earthy pit ovens, then crushed with a horse-drawn tahona and then fermented in open wooden vats with wild, naturally occurring yeast. The double distillation preserves the unadulterated character of the rare agave. The typical Bozal ceramic bottle in rich blue refers to the single malt origin and emphasises the original, untamed identity of this spirit. The name Bozal, which means "wild" or "untamed", is a deliberate homage to the inaccessible regions of Oaxaca, Guerreros and Durangos and to the Mezcaleros who have cultivated these traditions for centuries.
Tasting Note
Colour: Clear.
Nose: Powerful aromas of tropical fruit, fresh berries and a sweet note reminiscent of flan.
Flavour: Tropical start with papaya, followed by green pepper and a mineral structure.
Finish: Langs, mineral-accentuated and full of character, with a subtle floral depth.
This Tepeztate Mezcal Artesanal harmonises perfectly with grilled vegetables, smoked fish, taco gobernador, lemon rice or fresh ceviche, the acidity of which emphasises the floral and mineral complexity perfectly. Savoury components such as Manchego, goat's cheese or Oaxaca cheese also complement its spicy agave structure perfectly. Flan, guava compote or grilled pineapple are suitable for sweet combinations, emphasising its tropical notes. As a drink, it is recommended neat in Copita, in Tepeztate Margarita, in Oaxaca Negroni or as an intense Mezcal Old Fashioned.
