The careful ageing process takes a total of twelve years. Firstly, the rum is aged for eleven years in ex-bourbon barrels before being refined for a further year in cognac barrels. This process ensures a perfect balance of sweet, fruity and spicy flavours with a subtle woody nuance. Sustainability remains a central element: the distillery generates its own green electricity from the biomass of the sugar cane, uses the vinasse as a natural fertiliser and captures at least 50% of the CO₂ produced for reuse.
