The second fermentation takes place classically in the bottle, after which the sparkling wine is aged on the lees for at least 24 months, which gives it a fine perlage, depth and creamy texture. With a moderate alcohol content of 11.5% vol., it remains pleasantly light and accessible without sacrificing expression.

Tasting Note

In the glass, the HILL Brut Reserve has a light straw yellow colour with a fine, long-lasting perlage. The nose is complex, with aromas of green apple, citrus, freshly baked brioche and a hint of hazelnut. On the palate, the sparkling wine is elegant, dry and balanced, with a fine mousse, harmonious acidity and a long, mineral-influenced finish. The ageing on the lees gives it additional complexity and creamy depth without masking the freshness.
