The maturation process takes place in several stages and ensures a multi-layered flavour profile. Firstly, the rum is aged for six years in ex-bourbon barrels in its country of origin, Barbados. The distillate is then transferred to ex-sherry barrels and then further matured in ex-Banyuls wine barrels, where it undergoes Solera maturation for around four years. This combination of Caribbean rum tradition and Spanish and French cask culture creates a unique balance of fruit, flavour and elegant sweetness.
