The New Grove Rum Inception 21 Years Old Mauritius Rum Vintage 2004 50% Vol. 0.7 l + GB is a rare bottling from Mauritius and is one of the Grays distillery's most exclusive releases. The edition is limited to 960 bottles and comes from the two carefully selected casks Cask No. 045R & 070R. The base is molasses, 94% of which was distilled in a column still, reflecting the typically elegant, finely structured style of New Grove. The exceptional maturation period of 21 years took place in a combination of Limousin Oak, Chêne and ex-Cognac barrels, which give the rum a multi-layered depth, fine flavour and a rich fruity sweetness. Particularly noteworthy is the completely natural character of the bottling: 100% natural, no sugar, no colouring, no chill filtration - an unadulterated reflection of the Mauritian rum tradition.

There are also hints of wood, ripe dried fruit and the elegant freshness that comes from decades of ageing in cognac barrels. Tasting Note

Colour: Deep gold with amber reflections.

Nose: Caramelised sugar, molasses, yellow fruit, sweet spices, wood and dried fruit.

Taste: Full-bodied, fruity and spicy, with notes of molasses, caramelised fruit, spices and elegant wood maturity.

Finish: Langs, warm, complex and clearly characterised by the cognac cask.

This rum harmonises perfectly with dark chocolate, fig compote or caramel-based desserts, as its sweet, spicy and fruity nuances elegantly absorb these flavours. It is also an excellent accompaniment to full-flavoured cheeses or nut pastries. Enjoyed neat at room temperature, it reveals its full complexity, while a few drops of water release additional spicy and fruity flavours.
