The Saint James XO Rhum Vieux Agricole is a first-class rum from the traditional Saint James distillery in Sainte Marie, Martinique. Made from fresh sugar cane juice, this rum represents the essence of Caribbean craftsmanship. The Saint James Company cultivates most of the sugar cane required on its own plantations to ensure the highest quality. After fermentation, which takes 24 to 36 hours and converts all the sugar into alcohol, the rum is distilled to give it its incomparable character.

The resulting rum with an alcohol content of 75% by volume is allowed to rest for six months in stainless steel tanks. During this phase, unwanted flavours and carbon dioxide are released, resulting in a harmonious and balanced aroma. The Saint James XO Rhum Vieux Agricole is a blend that matures for between six and ten years in small oak barrels. This long maturation period gives it exceptional depth and complexity.

Tasting Note

Colour: Bright gold with deep amber reflections.

Nose: Intense and elegant with notes of dried fruit, vanilla, toffee and a hint of spices. A fine woody note rounds off the bouquet.

Taste: Full-bodied and smooth, characterised by caramel, dark chocolate, ripe fruit and gentle roasted aromas. A light spiciness and floral nuances lend it a special sophistication.

Finish: Langs and warm, with lingering flavours of oak, vanilla and dried fruit.

The Saint James XO Rhum Vieux Agricole is a pleasure that is best enjoyed neat or on ice to fully appreciate the complexity of its flavours. It harmonises wonderfully with dark chocolate, caramel-based desserts or exotic fruits and is an excellent accompaniment to a fine cigar. It can also be used as a luxurious ingredient in classic cocktails such as a "Rum Old Fashioned" or a "Mai Tai" to elevate them to a new level of flavour.
