Don Papa Baroko pays homage to Philippine history and to the hero Don Papa, one of the lesser-known but significant leaders of the Philippine Revolution. As a foreman on a sugar cane plantation, he joined the struggle for his country’s independence and led his compatriots to drive the invaders from his homeland. Inspired by this courage, this exceptional rum comes from the island of Negros, one of the most fertile regions of the Philippine archipelago.

Made from high-quality sugar cane grown in nutrient-rich volcanic soil, Don Papa Baroko undergoes a meticulous distillation process before maturing in oak casks. Only the finest and most prized casks are selected for this special rum, to perfectly bring out its intense fruity and vanilla aromas. The result is an exceptional rum with a gentle sweetness and a complex spiciness, honouring the spirit of the revolutionaries of that era.

Tasting Note

Colour: Brilliant amber with golden highlights.

Nose: Rich and inviting, with notes of vanilla, candied fruit and honey, accompanied by subtle toasty aromas from barrel ageing.

Palate: Silky and full-bodied with a harmonious balance of sweet caramel, tropical fruits and a gentle spiciness from oak and nutmeg.

Finish: Long and pleasantly warm, with lingering notes of vanilla, honey and a light, spicy depth.

Don Papa Baroko is ideal for enjoying neat, where its sweet and spicy notes come into their own. It can be enjoyed neat or on the rocks, but also reveals its exotic side in cocktails such as a rum sour or a Mai Tai. It pairs particularly well with dark chocolate, caramelised nuts or a dessert featuring vanilla and tropical fruits.
