Things to know before you buy liqueur

Liqueurs are flavored, sweet-tasting spirits, usually with an alcohol content of 15-35%, but some have even more "spirit." We at delicando want to introduce you to the world of liqueurs so you can buy the one that suits you best.

History and Origin of Liqueurs

Like many other spirits, liqueurs also have their origin in medicine. In 13th-century Catalonia, high-proof alcohol was distilled for the first time. A physician combined spirits with herbs to extract their ingredients and active substances. This process is now also known as maceration. After that, this alcohol mixture was distilled 1-2 times.

Many years passed during which pharmacies and monasteries had an unspoken monopoly on the production of calming, stimulating, or digestive-aiding spirits. Even today, medical products with sometimes high alcohol content are offered in pharmacies. As early as the 14th century, spirits and liqueurs developed from remedies into luxury goods. Due to the high sugar prices, production costs were immensely high at the time, and liqueur consumption was reserved only for the wealthy.

After colonization, large quantities of sugar became available, and liqueur production experienced a boom. Many traditional companies were founded as early as the 18th century. These include companies such as Bols, De Kuyper, and Marie Brizard, which are still important places to buy liqueurs today.

Spoiled for Choice: Buying Liqueurs Today

According to EU law, this flavored spirit must contain at least 100g of (invert) sugar per liter and 15-40% alcohol by volume. Sugar, various sweeteners, and honey can be used for sweetening. According to the Austrian Food Codex, the following alcohols are permitted in liqueur production: ethyl alcohol of agricultural origin, brandies, spirits, distillates, wine, and fruit wine. Fresh, preserved, and dried fruits, fruit pastes, herbs, tea, eggs, cocoa, milk, chocolates, and special flavorings may also be used in liqueur production. Very sweet liqueurs (at least 250g sugar per liter), which are mostly used in cocktails, are called crémes. If you want to buy a liqueur, you are faced with a huge selection of different flavors – making the choice anything but easy.

Buying Liqueurs: All About Liqueur Production

The first production step involves mixing the different ingredients according to a specific recipe. The ingredients are slowly added to the mixer in a coordinated rhythm. During this process, ingredients with a higher alcohol content are added first. The second production step involves filtration, where the distillates, brandies, and liqueurs are cleaned of particles. This is followed by cooling the mixture, where the art lies in preserving the flavors. In the third production step, the precise filling quantity is crucial and is checked by control measuring devices. Depending on the production method, a vacuum filler is used here, allowing for hygienic and gentle bottling. In the fourth production step, the bottles are sealed, which can be done either by a capping machine or by hand. The final production step involves labeling, sealing, packaging, and transporting the bottles so that you can finally buy the liqueur.

Difference Between Liqueur and Schnapps

Liqueur and schnapps differ primarily in taste and production. Liqueur is sweet and contains added sugar, as well as often flavorings such as fruits, herbs, or cream. That's why liqueur usually tastes mild and aromatic. Schnapps, on the other hand, is stronger, has little sugar, and usually consists of pure ingredients such as fruits or grains that are distilled. While liqueur is often drunk neat or in cocktails, schnapps is often served simply as a strong shot.

For many centuries, liqueur was only used by pharmacies or monasteries, as its production was very complex.

Since the development of the production process, much experimentation has been done with liqueur and its different flavors. Proper storage of liqueurs often depends on the ingredients and alcohol content. Unopened bottles should always be stored cool, dark, and upright to preserve flavors and freshness over a longer period.

Cream liqueurs and liqueurs with cream or egg: These special liqueurs are more sensitive and should be refrigerated after opening. Due to the milk or egg components they contain, they have a shorter shelf life and should be consumed within six months to ensure the best taste and consistency.

Fruit and herbal liqueurs with high alcohol content: These varieties usually have a longer shelf life. The high alcohol content acts as a preservative here, ensuring that they remain enjoyable for several years even after opening. Refrigeration is not strictly necessary here; a cool and dark place is sufficient.

Liqueurs with low alcohol content: Liqueurs with a lower alcohol content or sensitive ingredients such as fruit purees usually have a shorter shelf life. They should also be stored cool and consumed as quickly as possible to optimally preserve flavors and freshness.

Buy liqueur? Why not just make it yourself?

Instead of buying a liqueur, you can also make it yourself at home. However, it will not reach the fine artistry of experienced manufacturers. In the first step, fruits are chopped and placed in a glass bottle. The selected high-proof alcohol (e.g. vodka) must cover the fruits. Afterwards, about 6 tablespoons of sugar, herbs or cinnamon are added. Then the mixture is placed in the bottle in the sun for at least six weeks and shaken once a day. For a herbal liqueur, you should let it rest for another four weeks after 6 weeks. A fruit liqueur should also stand for at least 4 weeks. The longer, the better! The liqueur base should show a great color. After this time, your very own liqueur is ready and can be drunk. The liqueur can be enjoyed neat, on ice or in a cocktail.
