The production of mezcal begins with the harvesting of agave plants, whose hearts, known as ‘piñas’, are roasted after the leaves have been removed. This roasting method, carried out in underground pit ovens, gives the mezcal its characteristic smoky flavour. After roasting, the piñas are crushed, fermented and distilled. The resulting mezcal can then either be bottled straight away or stored for further ageing.

The production of sotol begins with the harvesting of Dasylirion plants. After harvesting, the plant hearts are roasted, crushed and fermented. The fermented juice is then distilled. Sotol is characterised by a complex flavour profile that is shaped by the influences of the desert.
