From Distillation to Whisky Purchase - Origin & History of Whisky

In Ireland and Scotland, the distillation process spread around the 11th century AD. The decisive factor was the development of the alambic still, which is still used today. This technique was adapted by ecclesiastical institutions for the production of medicines. Thanks to the Irish St. Patrick, the knowledge of whisky production was spread. The patron saint was born in Scotland and lived in Ireland. He is also credited with the copyright. However, the question of the origin of whisky cannot be clearly answered. The fact is: the production of drinkable whisky was documented from the 12th century onwards.

The History of Whisky

Starting from Ireland, the knowledge about whisky production spread to Scotland. In our whisky shop, you can also buy numerous whiskeys from Ireland. Therefore, as a whisky shop, we have also dealt with its history. In Ireland, peat was used instead of coal to heat the kilns. This smoky taste has since been characteristic of Scotch whisky. The first written proof of production in Scotland was an invoice for the purchase of malt in 1494. At that time, whisky was mainly used as a remedy for various ailments. However, it did not take long until the common people also acquired a taste for the "water of life." This became a serious problem when the staple food barley became scarce, yet illicit distillation continued.

Buy Whisky – Whisky and its Political Influence

The sale of whisky was repeatedly taxed to finance wars, and when the Scottish and English parliaments merged in 1707, the spirit became widespread throughout the country. Uprisings and the strong growth of "original Scottish" illicit distilleries were the consequences and at the same time an expression of political resistance. Illegal smugglers and distillers from the Highlands were revered as national heroes. Illicit distilling was continuously put to an end with the "Small Stills Act", and the distinction between Highland and Lowlands was introduced, and smaller distilleries were legalised. With favourable taxation, storage, and tax-free export of whiskies, widespread illicit distilling was eradicated and the way was paved for every whisky shop. In Ireland, the government was meanwhile keen to extract the greatest benefit from whiskey production, and buying whisky became very expensive due to the exceptionally high tax. The whisky shop black market flourished, and whiskey was divided into two categories: legal (parliament) and illegal, original Irish whiskey (poitín). A new, more favourable tax for distilleries was introduced, and the black market lost its significance. Renowned companies such as Jameson and Powers established themselves on the international shelves of the whisky shops of the time. After these Irish distilleries had rejected the new "Patent Still" technology, Scottish companies and whisky shops were on the rise. The Scottish wave of success continued, leading to the development of the first true Blended Whisky, which could be produced more cheaply than pure Malt Whisky with almost identical quality. However, with the outbreak of the First World War, not only whisky shops but the entire spirits trade came to a standstill, as all grain could only be used for food production. After various uprisings and wars that led to trade interruptions, Prohibition was abolished under Roosevelt and the markets for buying whisky reopened. The Scots, with their well-stocked warehouses of numerous whisky shops, were far better prepared than the Irish.

There are different types of blends:

  2. Blended Malt Whisky: This exclusively blends different Malt Whiskies from various distilleries, without Grain Whisky.

Whisky or whiskey?

"Whisky" is the term for grain spirits from Scotland and Canada. "Whiskey" is used for grain spirits from the USA and Ireland. The extra "e" solely indicates the country of production, not the quality or the manufacturing process. Before you buy whisky, learn more about casks, storage, and shelf life

When bottling the whisky that you can later buy, distilleries work with fixed time intervals. An important rule here: the larger the cask, the slower the maturation, as the contact surface with the wood is smaller. Traditionally, sherry or bourbon casks with a capacity of 500 liters are used for this. To achieve special aromas, wine casks are also used.

Oak casks are legally required, as is the minimum maturation period. In Scotland and Ireland, whisky must mature for at least three years; in the USA, only two years. The rule of thumb is: the longer the maturation period, the better the whisky.

After purchase, proper storage is crucial. Whisky should be stored upright, cool, and protected from light. Opened bottles best maintain their quality if consumed within 3 to 5 years.

Whisky in the USA and Canada

With the immigration movement in the 18th century, Scottish and Irish settlers brought customs such as whisky production to the USA and Canada. In the USA, the spelling "Whiskey" is used, whereas in Canadian whisky shops both forms are common. The first written documentation dates back to the end of the 18th century. Barley grew significantly worse in the USA than in the old country. For this reason, rye and corn were used for the first time to distill whiskey. Success was not long in coming, and the state also wanted a piece of the pie through taxes. The whisky shops and whiskey producers called for the Whiskey Rebellion, which could only be crushed after an order from the then president and army support. Kentucky became a haven for many rebels, including the Jim Beam, Brown-Forman, and Maker's Mark families. This was the birth of Kentucky whiskey. Those who wanted to buy whisky could do so in special shops, and so it developed into an affordable mass drink. It was not long before an abstinence movement developed, demanding the complete alcohol withdrawal of the entire nation, but it remained without long-term success. In Canada, the Walker company broke new ground by having a blend aged in barrels for over 6 years for the first time and bottled in "Club Whisky" bottles. The anti-alcohol movement also led to a partial alcohol ban in Canada, which was lifted shortly thereafter to put a stop to illicit distilling. International significance of whisky production

Besides the USA and Canada, many other countries specialize in producing high-quality whisky. Scotland, the birthplace of whisky, is naturally the flagship of international whisky production. Scotch Whisky, especially Single Malt Scotch, is made from malted barley and must mature for at least three years in oak casks before it can be sold as Scotch. Regions like the Highlands, Islay, and Speyside are world-renowned for their unique whiskies.

Ireland, another country of origin for whisky, is characterized by its Irish Whiskey, which is often triple distilled, giving it a particularly smooth and mild note. Brands like Jameson are internationally popular and among the best-selling whiskies in the world.

In recent decades, Japan has also developed into an important player in the international whisky market. Japanese whisky is heavily influenced by the Scottish style, but due to the unique geography and special microclimate of the production sites, a whisky with its own character is created. Brands like Yamazaki and Nikka have won international awards and are in demand worldwide in specialized whisky shops.

Recently, countries like India, Australia, and even Sweden and Taiwan have also started producing their own high-quality whiskies.
