The very popular Paulaner beer has its origins in 1751, when the Paulaner monks received their first official license to serve beer on the day of their religious father. They even gratefully invited the Bavarian Elector himself, which made Paulaner beer famous outside the monastery walls. In 1780, it was then served without restriction. Its current basic recipe was created in 1773 by the monk Valentin Stephan Still, known at the time as Brother Barnabas. He set completely new standards with his innovative architecture and changed the Salvator in terms of taste and quality. The focus here is on malty and slightly fruity notes.
In 1806, the brewery passed into the hands of Franz Xaver Zacherl, who modernized and expanded it. Paulaner beer gained further fame from 1818, with a license to serve beer at the Munich Oktoberfest. From 1881 onwards, more and more modern techniques are used and an ice machine makes year-round brewing possible. Even the major destruction of the brewery in 1944 due to a bombing raid could not stop the success of Paulaner beer. It was completely rebuilt by 1950 and was taken over by the Schörghuber family in 1979. The success is crowned when Paulaner Bier launches the first non-alcoholic wheat beer on the market in 1986.
