This mezcal is made from 100% Espadín agave (Agave angustifolia), which matures for several years under the hot Mexican sun before being harvested. After the traditional cooking process in earth ovens, in which the heart of the agave (piña) is slowly roasted over wood and stones, the typical smoky aroma is created. The subsequent fermentation takes place in open wooden vats before the mezcal is distilled twice in copper stills.
