Für diese limitierte Abfüllung werden nur vollreife, sonnenverwöhnte Wachauer Marillen (Aprikosen) aus Niederösterreich verwendet. Die Wachau ist eine der bekanntesten und renommiertesten Marillen-Regionen Europas, berühmt für ihr einzigartiges Klima und ihre mineralreichen Böden, die den Früchten ein besonders intensives Aroma verleihen. Nach sorgfältiger Handlese werden die Früchte eingemaischt und schonend über mehrere Wochen fermentiert, bevor sie im traditionellen Brennverfahren zweimal destilliert werden.
Das Destillat wird anschließend mehrere Jahre in offenen Glasballons im Dachboden der Brennerei gelagert. Dort reift es bei natürlicher Temperaturschwankung, gewinnt an Eleganz und entwickelt seine unvergleichliche Aromentiefe. Mit einem Alkoholgehalt von 50 % Vol. ist der Rochelt Wachauer Marille 2018 kraftvoll, intensiv und dennoch harmonisch.
