The sugar cane is harvested by hand and processed into molasses in the Lautoka sugar mill. Maturation takes place as part of a double-ageing process: the rum first matures under tropical conditions in ex-bourbon barrels in Fiji before being transported by ship - a journey that Planteray calls "dynamic ageing" - to France.
