Akashi-Tai is the flagship of the Akashi Sake Brewery, which has been based in the port city of Akashi in Hyōgo Prefecture since 1917. Under the direction of Toji Kimio Yonezawa, sake is handcrafted here in small batches and with great dedication.
The brewery uses only high-quality Yamadanishiki rice and pure spring water from the region. Every step - from polishing the rice to fermentation - is done by hand to ensure the quality and character of the sake.
