This Bozal Ensamble Mezcal Artesanal combines three wild agave varieties - Espadín, Barril and Mexicano - and thus displays an aromatic depth typical of Oaxaca that can only be achieved using traditional production methods. The three agaves come from different altitudes in Mexico and mature for between seven and twelve years before they are harvested by experienced mezcaleros. Each variety brings its own characteristics: While Espadín, the genetic mother of the Blue Weber agave, appears earthy and slightly floral, Barril from the Karwinskii family provides delicate citrus notes and creamy textures. Mexicano, a wild Rhodacantha agave, is particularly powerful and mineral and lends the ensemble a striking depth.

The Bozal Espadín-Barril-Mexicano is produced strictly by hand. The agave hearts are cooked in earthy pit ovens, then crushed with a horse-drawn tahona and fermented in open vats without the addition of artificial yeast. The double distillation preserves the unadulterated character of the agave. Bottled in the characteristic rustic ceramic bottle, this mezcal underlines its natural, wild origins and appeals to lovers of authentic, traditional agave spirits. Nose: Balanced aromas of pear, green apple, allspice, vanilla; Barril contributes citrus and green bell pepper.

Taste: Harmonious mix of stone fruit, lime zest, herbal spice and creamy banana; mineral accents of Mexicano.

Finish: Warm, viscous, long, mineral, with a persistent interplay of the three agaves.

This Ensamble Mezcal Artesanal harmonizes perfectly with grilled vegetables, Oaxaca quesadilla, smoked fish, pico de gallo or lemon chicken, whose fresh and spicy aromas ideally complement the citrus-mineral character of the Barril and Mexicano. Sweet accompaniments such as baked pineapple, coconut desserts or mango tarts create an exciting contrast to the earthy agave base. In drinks, it particularly shines in Mezcal Margarita, Oaxacan Old Fashioned or pure in the traditional Copita, where its long-lasting aroma unfolds fully. (automated translation)
