Firstly, the original Unicum is stored in the distillery's largest and oldest wooden barrel, which has been resting in Zwack's historic cellars for over eighty years. Over the decades, an aromatic layer has formed on the barrel walls, which the master distillers affectionately refer to as "black honey". This provides additional depth, warmth and complexity to the flavor profile.
In the second maturation stage, the Unicum is transferred to Tokaj oak barrels in which the famous Hungarian sweet wine Tokaji Aszú was previously stored.
