123 Organic Tequila - USDA & EU certified organic tequila from Jalisco
123 Organic Tequila, developed by Tequilero David Ravandi, relies on biodynamic cultivation and its own spring water in the Tequila Valley (NOM 1480). A pure blanco is made from over 400,000 of its own Blue Weber agaves and the matured versions are bottled in recycled glass - hand-blown and labeled with soy ink.
Region & origin
Sourced directly from the Tequila Valley (Los Valles), Jalisco - at over 1,300 meters above sea level. The ingredients are USDA- and EU-certified organic, harvested after over 10 years of growth to achieve maximum agave maturity and aroma density.
Production & craft
Agaves are steamed in stone ovens, ground with roller mills, fermented in stainless steel fermenters and double distilled in stainless steel pot stills with copper pipes. Reposado is aged for six months, Añejo for 18 months in white oak barrels, Extra Añejo ("Diablito") for even longer.
