Diese Serie erscheint jährlich als Hommage an den ikonischen Gipfel des Dùn Caan (gälisch Dùn Cana), den höchsten Berghügel der Isle of Raasay. Mit einem Alkoholgehalt von 52% Vol. in Fassstärke präsentiert sich dieser Single Malt intensiv, komplex und gleichzeitig ausgewogen.
Das Rezept basiert auf einer Vermählung von getorftem und ungetorftem Destillat, das zunächst in ehemaligen Rye-Whiskeyfässern aus Kentucky reifte. Anschließend erhielt der Whisky für neun Monate ein Finish in kleinen Quarter Casks (125 Liter), die zuvor mit Pedro Ximénez und Oloroso Sherry der renommierten Bodega Miguel Martin belegt waren. Dadurch entstand ein facettenreiches Aromenspiel aus süßen, fruchtigen und würzigen Noten, das die Handschrift der Brennerei perfekt widerspiegelt. Diese zweite Edition der Dùn Cana Serie hebt sich durch ihre individuelle Fassauswahl ab, da sich jede Abfüllung in Zusammensetzung oder Alter leicht unterscheidet. Abgefüllt in natürlicher Farbe und ohne Kühlfiltrierung, bleibt der Whisky authentisch und unverfälscht. Tasting notes:
Farbe: Dunkles Bernstein mit rötlich-goldenen Reflexen.
Nase: Kräftige Sherryaromen, Rosinen, Trockenfrüchte, feiner Rauch und süße Gewürze.
Geschmack: Vollmundig und komplex mit Noten von dunkler Schokolade, Datteln, Toffee, Eichenwürze und leichter Torfigkeit.
Abgang: Lang anhaltend, würzig, fruchtig und elegant rauchig.
Der Isle of Raasay Dùn Cana Second Edition entfaltet seine Stärken pur bei Zimmertemperatur, lässt sich aber auch vielseitig kombinieren. Er passt zu gereiftem Blauschimmelkäse wie Roquefort, zu kräftigen Fleischgerichten wie Lammkeule oder Wild sowie zu süßen Desserts wie Feigenkuchen oder Schokoladen-Tarte. Ebenso eignet er sich hervorragend als Basis für edle Whisky-Cocktails, etwa einen Smoky Old Fashioned oder einen Rob Roy, bei denen seine Sherry-Süße und leichte Rauchigkeit besondere Tiefe verleihen. Als limitierte Edition ist er zudem ein echtes Highlight in jeder Whiskyverkostung.
