Ilegal Mezcal was officially founded in 2006 - its roots go back to the bootleg era, when founder John Rexer secretly brought mezcal from Oaxaca to Guatemala. Today, the mezcal is produced in small batches from 100% Espadín agave, hand-picked, traditionally roasted in earth ovens and distilled twice - natural, sustainable, full of character.

Produced in Tlacolula, Oaxaca, Ilegal Mezcal follows the traditions of four generations of mezcaleros. The agave is sustainably harvested, roasted in an earth oven and fermented in open wooden barrels - impressing with its earthy, smoky profile and fine balance.
Production & craft
Espadín agaves mature for up to ten years, are roasted in brick-built earth pits, ground using a traditional tahona and then fermented in open pine vats. The double distillation takes place in small copper stills - for an unadulterated, intense aroma.
