Damit reiht er sich in die Riege hochqualitativer Schaumweine ein, die sich durch Eleganz, Feinheit und komplexe Aromatik auszeichnen. Die Cuvée vereint Sauvignon Blanc und Cabernet Franc – vinifiziert nach der Methode Blanc de Blancs et Blanc de Noirs. Während Sauvignon Blanc für Frische, lebendige Frucht und Struktur sorgt, bringt Cabernet Franc Würze, Finesse und eine elegante Tiefe ein.
Die Trauben gedeihen auf steinigen, kalkhaltigen und sandigen Lehmböden, was dem Wein seine prägnante Mineralität verleiht. Nach einer gekühlten Erstvergärung im Edelstahltank folgt die zweite Gärung in der Flasche, in der der Cesario 18 Monate auf der Hefe reift. Mit Naturkork verschlossen und bis mindestens 2030 lagerfähig, bietet er ein stilvolles, langlebiges Schaumweinerlebnis. Tasting notes:
Im Glas präsentiert sich der Cesario Brut in einem hellen Goldgelb mit feiner, lebendiger Perlage. In der Nase entfaltet er ein vielschichtiges Bukett von schwarzer Johannisbeere, Stachelbeeren und Weingartenpfirsich, ergänzt durch feine Noten von Butter-Brioche und leichter Röstaromatik. Am Gaumen überzeugt er mit jugendlicher, verspielter Säure, leichtem Gerbstoff und einer perfekt eingebundenen, natürlichen Kohlensäure. Das Finish ist lang, elegant und von frischer Mineralität getragen.
