Description

AI GALLI Ribolla Gialla Brut is an elegant, fine sparkling wine made from one of the most traditional grape varieties in northern Italy. Ribolla Gialla, an indigenous white wine variety from Friuli and Veneto, stands for freshness, fine aromas and a lively acidity structure. In the AI GALLI version, this classic grape variety is vinified with great care and transformed using the Charmat method into a stylish brut sparkling wine that perfectly combines modernity and regionality.

The grapes are carefully harvested, gently pressed and the must fermented at a controlled temperature of 18-20 °C on selected yeasts. The base wine then undergoes a second fermentation in a pressure tank, where it develops its fine perlage under controlled conditions (14-16 °C). After reaching the desired pressure, the wine is stabilized at -4 °C and then rests on the fine lees for another month or so. This process gives Ribolla Gialla Brut its freshness, clarity and elegance.

With an alcohol content of 12% vol., this brut sparkling wine is an ideal companion for festive occasions, summer aperitifs or stylish dinners - sparkling, dry and full of character.
