The grapes come from AI GALLI's own vineyards, which thrive on medium-density, clayey soils - a soil structure that is ideal for elegant, structured white wines with clear fruit and mineral freshness.
Vinification follows the classic white wine production method. The grapes are gently pressed and the must is immediately separated from the skins to avoid undesirable amber coloration - typical of the Pinot Grigio grape. Temperature-controlled fermentation at 18-20 °C lasts around ten days and takes place on carefully selected yeasts. The wine then matures for several months on the fine lees in stainless steel tanks before being bottled. A two-month bottle maturation provides additional rounding off.
