Der AI GALLI Prosecco Brut DOC ist ein feinperliger, eleganter Schaumwein aus 100 % Glera, der aus den hauseigenen Weinbergen des Weinguts AI GALLI in Pramaggiore stammt – einer besonders renommierten Zone im östlichen Veneto. Die Reben wachsen auf tonhaltigen Böden mittlerer Dichte, was dem Prosecco Frische, Struktur und eine dezente Mineralität verleiht. Dieser Prosecco wird mit größter Sorgfalt nach der Charmat-Methode hergestellt und zeigt sich als authentischer Vertreter eines modernen, fruchtbetonten Brut-Stils.
Die Trauben werden von Hand gelesen, sanft gepresst und kalt dekantiert. Der Most vergärt anschließend 10 Tage bei 18–20 °C auf sorgfältig ausgewählten Hefen. Der Grundwein wird dann in Drucktanks zur Schaumbildung weitervergoren – 18 bis 20 Tage bei 14–16 °C. Sobald der gewünschte Druck von ca. 6 bar erreicht ist, wird die Temperatur auf –4 °C gesenkt, um die Gärung zu stoppen und den Wein zu stabilisieren. Eine weitere Lagerung auf der Hefe über einen Monat fördert die Feinheit und Aromatik. Anschließend erfolgt die isobare Abfüllung in Flaschen.
Mit 11 % Vol. Alkohol zeigt sich dieser Prosecco besonders trinkfreudig, ausgewogen und elegant – ein vielseitiger Genuss für viele Gelegenheiten, der durch handwerkliche Präzision und Rebsortentypizität überzeugt. Tasting notes:
Im Glas zeigt sich der AI GALLI Prosecco Brut in einer hellen, strohgelben Farbe mit feiner, anhaltender Perlage. In der Nase offenbaren sich reine, fruchtige Aromen von Renettenapfel und Pfirsichblüten. Am Gaumen präsentiert sich der Prosecco geschmeidig, harmonisch und angenehm frisch, wobei das feine Mousseux die fruchtigen und floralen Eindrücke elegant unterstreicht.

Dieser Prosecco ist ein idealer Aperitif, passt aber auch hervorragend zu leichten Vorspeisen mit Käse oder Fisch, sowie zu feinen, mediterranen Gerichten. Aufgrund seiner Vielseitigkeit kann er gut ein ganzes Menü begleiten – von zarten Fischgerichten bis hin zu milden Gemüse- und Kräuterkompositionen.
