No one says "no" to sparkling wine
In the past, sparkling wine was only made for a few special people who were members of the royal family, but today this drink is available to everyone. Most champagne brands come from France, and in fact, it is the final product of grape fermentation that undergoes special treatment to achieve the absolute best possible taste.
The whole story, of course, takes us to the French province of Champagne, the coldest French wine region, which is extremely important for Champagne production. Champagne grapes are harvested with nine to ten percent potential alcohol and very high acids, then a basic still wine (to which sugar is sometimes added) is made from these grapes. From the sparkling province of Champagne comes the classic method or method of secondary fermentation in a bottle about 150 years old, better known as the classic method or method of Champenoise.
Rosé Champagnes are known for their versatility, as they can be drunk with heavier dishes, as well as lighter ones, and even with desserts. Rosé sparkling wines have subtle and rich aromas and flavors - they additionally combine with aristocracy and they have recognizable aromas of fresh berries (strawberry, raspberry) as well as aromas of ginger, pepper and peony.
Behind the first pink sparkling wine is a woman
More than two centuries ago, rosé champagnes were made by adding and blending older fruit, but Madame Clicquot wasn't satisfied with that and set out to revitalize the production of pink sparkling wines. She loved red wine made from grapes grown in the Bouzy region and produced her own local red wine, which she later blended with white wine. This is exactly how the first known rosé sparkling wine with a charming taste was born: Veuve Clicquot Rosé.
Since 1818, Veuve Clicquot Rosé has been produced according to Madame Clicquot's method with the addition of red wine. This method of production is called Savoir - Faire and allows the creation of a top rosé cuvée.
A unique method of development
The production of pink sparkling wine consists of two basic phases: the production of base wine from basic grape varieties and the secondary fermentation of the base wine in the bottle.
The secondary fermentation requires a lot of time and dedication to the wine and includes, among other things, the technique of remuag - turning the bottles and degorgament - throwing sediment out of the wine and adding expedition liqueur.
But how exactly does one achieve the color pink? With mastery and patience in the cellar! The color is usually achieved in one of the following three ways:
'Rosé d'Assemblage' is the most common, where a small amount of Pinot Noir or Pinot Meunier (made as table wine) is added - usually only 5% to 10%, but sometimes up to 20%.
A less common method: samotok is added directly after milling red grapes.
Limited maceration - a method of producing dark, heavy wines by rapid immersion of red grape skins. It can be as short as a few hours or as long as a few days, and depends heavily on when the grapes are harvested. Therefore, the production of rosé wine is particularly cumbersome, not only for the uncertain combination of the acidity of the champagne with the tannins of the red wine, but also to determine the desired depth of color.
The oldest champagne house in the world, Maison Ruinart dating back to 1729, Veuve Clicquot was the first champagne house to begin commercial sales of pink champagne as early as 1775.
How is rosé sparkling wine made?
The answer lies in winemaking techniques. Below are two most commonly used methods:
1. mixing white and red wine.
Rosé Champagne can be made by blending 5% to 20% still red wine - Pinot Noir or Meunier Pinot Noir - in white wine. This is done before the second fermentation in the bottle. The second fermentation always takes place in a different vessel from the one in which the wine was first fermented.
2. saignee method
The pink hue of Champagne is also achieved by bleeding the skins of Pinot Noir and Meunier black grapes. In this process, the grape must of the red wine (freshly crushed fruit with skins, seeds and stems of red grapes) is allowed to come into contact with the skins of the grapes for only a few hours. This allows the natural grape pigments to color the juice and enrich it with its aromatic components.
Although pink sparkling wines have a light color, they have strong aromas. The Rose de Saignee technique is used by famous winemakers such as Francis Boulard, Louis Roederer and Laurent-Perrier.
What is the difference between rosé champagne and regular champagne?
Classic Champagne is a sparkling wine made from the pulp and juice of the grapes - so it is pigment-free and white like Prosecco. They also offer less red fruit intensity than rosé sparkling wines.
Additional note: A difference also exists between rosé Champagne and Blanc de Blanc wine. The latter is a sparkling wine made from white grapes.

The bubbles/pearls must be small and numerous and move continuously upward from the bottom of the glass. A good premium pink sparkling wine must be sharp, almost bitter in very dry sparkling wines: fresh, creamy, reminiscent of yeast. A single bottle of sparkling wine contains about 250 million bubbles. They are supposed to give a refreshing sensation in the mouth and balance sweet and sour.
Sparkling wines, just like wines, are distinguished by the presence of sugar. Accordingly, there is extra brut - which is the driest variant up to 12 g of sugar per liter. Finally follows brut with 15 g of sugar per liter, then extra sec with 12 g to 20 g of sugar per liter, sec - dry with 17 g to 35 g of sugar per liter, demi sec - semi-dry with 33 g to 50 g per liter and Doux, the sweetest sparkling wine with more than 50 g of unfermented sugar per liter. If no expedition liqueur is added at all, such champagnes (and sparkling wines) are called brut nature, brut zero or non-dosage, which means that after disgorging the bottles are filled with wine of the same quality - without added sugar. And such are of the highest quality.
The versatility of pink champagne is its best feature. You can drink it as an aperitif with raw foods like oysters, sushi, sashimi or carpaccio, but also with cooked meals or after the main meal.

How to drink the rosé champagne?
Sparkling wine wants to be chilled appropriately. Before serving, the drink is displayed on a specific temperature scale that corresponds to the year of harvest and appearance. Simply chill it to seven to nine degrees Celsius (place the bottle in the refrigerator for about three hours).
The shape of the glass can be any, but always on a high, thin leg and with absolutely transparent walls to show off the play of colors and imaginative bubble trajectories.

What is more interesting than a bottle of champagne? Pink champagne, of course. The popularity of rosé champagne has soared in recent decades. And to be honest, we're not entirely surprised. But how exactly did pink champagne get such a wonderful color? By mixing red and white wine, of course. In fact, Champagne is the only region in the world where you can legally mix red and white wine to make roses. To make Champagne, winemakers are allowed to use the following three grape varieties: Chardonnay, Pinot Noir and Pinot Meunier, the other two of which are black grapes.
