The Kilchoman 100% Islay 11 Years Old Sherry Cask Islay Single Malt Scotch Whisky exemplifies the uncompromising farm-distillery approach of the Kilchoman Distillery. This bottling combines all production steps entirely on the island of Islay and therefore bears the label 100% Islay in its purest form. This Islay single malt Scotch whisky was distilled from the distillery's own barley harvests of 2011, 2012 and 2013 before maturing for at least 11 years in carefully selected ex-Oloroso sherry butts. A total of 16 first-fill Oloroso sherry casks were used, which were previously used by José y Miguel Martin in Jerez, Spain, giving the whisky a striking depth.

The Kilchoman 100% Islay Sherry Cask 11 Years Old was bottled at a powerful 50% vol, naturally without chill filtration and without colorant. Compared to previous 100% Islay editions, which matured predominantly in ex-bourbon casks, this sherry cask matured bottling has a significantly darker and more structured profile. The long maturation in Oloroso sherry casks underlines the unique character of the Kilchoman style and complements the typical Islay peat with depth, spice and substance. This limited bottling is supplied in a high-quality gift box, which further emphasizes its status as a coveted collector's item and object of enjoyment.

This sherry cask matured Islay whisky is particularly harmonious with strong dishes such as braised game, roast lamb or slow-cooked beef variations, in which the depth of the Oloroso sherry casks and the characteristic Islay smoke are integrated in a balanced way. The combination with intensely matured hard cheeses or dark desserts based on dark chocolate with a high cocoa content is equally harmonious. As a meditation whisky with a strong character or as a striking component of an Islay whisky collection, this bottling offers a long-lasting and impressive enjoyment experience.
